Preparation time: 10 minutes
Cooking time: 4 hours freezing time
Put the mango and SPLENDA® Granulated in a food processor or liquidiser and blend until smooth.
Add the egg whites and lime juice then blend to combine.
Pour the mixture in to a shallow freezer proof container and freeze for 1 hour.
Remove from the freezer and mash or whisk to break down large crystals.
Return to the container and freeze for at least 3 hours until solid.
Alternatively follow manufacturer’s instructions for an ice-cream machine.
To serve, remove from freezer to soften 10 minutes before scooping. Decorate with mint leaves (optional)
